The Olive – History and Production


The Olive tree dates back to early ancient times in both biblical and classical writings. In these early writings, the olive oil is referenced as a symbol of both goodness and purity, and the tree represents peace and happiness. In ancient times, the oil was also burnt in sacred lamps at temples during the Olympic Games, and the victor was crowned with its leaves.

Olives have been cultivated since prehistoric times in Asia Minor. Today olives are commercially produced in Spain, Italy, France, Greece, Tunisia, Morocco, Turkey, Portugal, China, Chile, Peru, Brazil, Mexico, Angola, South Africa, Uruguay, Afghanistan, Australia, New Zealand, and California. The Mediterranean area produces 93% of the olive production. Currently there are some 800 million olive trees being cultivated. California is the only state where olives are grown commercially. Over 90% of the olive production is used to make olive oil.

The Olive tree is considered an evergreen tree. These trees can live to be over 2,000 years old. They grow 20-40 feet high and begin to bear fruit between 4 and 8 years old. The tree blooms with small whitish flowers and have a wonderful fragrant.

A Franciscan missionary planted the first olive tree in California in 1769 at a Franciscan mission in San Diego. The olives grown in California are called ¡°mission olives¡±. Of all the species of olives, this olive is especially good for its oil.

Olives are not edible, green, or ripe, and must be treated with lye and/or cured in brine or dry salt before being edible. They contain about 20% oil. Olives must be processed to remove the bitter glycoside oleuropein, before they are edible, so they are usually first treated with lye and then pickled.

Greek olives are not treated with lye. They are strong tasting because they are just packed in dry salt, or pickled in brine for 6 to 12 months (where they undergo a process of lactic fermentation), and finally packed in fresh brine.

Spanish green olives are picked before they are ripe, treated with lye, and then placed in a brine and allowed to ferment.

California olives are treated to set the pigment, treated with lye and then packed immediately in brine and sterilized. They do not undergo the fermentation process, and the sterilization ‘cooks’ them. This lack of fermentation and the ‘cooking’ when they are sterilized produces a bland, uninteresting olive

Top 5 Things You Need in Your Kitchen


If you are just starting to cook, or are moving in on your own, chances are, you don’t have much in terms of cooking equipment. Here is what we recommend for you to get, as you are starting out. As times goes by, you will, of course, get more kitchen gadgets. But here are five that we recommend starting out with:

– Chopping board. This is something very basic, as you can’t chop anything without having a chopping board. It is very versatile, as you can chop pretty much anything on it – onions, potatoes, tomatoes, meat, herbs, etc.

Some people prefer to get separate chopping boards to meat, dairy items, vegetables, etc. Others get differently sized chopping boards, and use them depending on the volume of things they need to chop. Start out with one, and see what else you need.

– A knife. Again, this is very basic, but you will not be able to chop or cook anything without a knife. A good, sharp knife goes a long way to help you prepare food. You can go to some stores, and hold the knives in your hand, so that you know which one you are comfortable with.

– A big pot. You need a pot for pretty much anything – from boiling pastas to making soups to stewing to pretty much anything else. Some pots come with colander inserts, which makes it easier to cook pasta. Or, you may get a colander separately, and use that.

– A saute pan. We love saute pans, and use them all the time. Again, they are very versatile, and we recommend getting ones without wooden handles, so that you can put the saute in the oven as well.

Use the saute pan for preparing stir fries, sauteing meat and fish, cooking vegetables and much, much more.

– Roasting Pan. These are perfect for preparing things in the oven. From roast to roasted chicken to roasted vegetables, a roasted pan can help you cook your favorite dishes in the oven.

Don’t be scared – cooking is fun. Start getting a few things that we recommended, and add to your collection of kitchen equipment as time goes.

“7 Surprisingly Quick And Easy Ways To Feel Happier”

12 All of us have days when we’re out of sorts. You just wish you were in a better mood. You’ve had days like that, haven’t you? Perhaps you tried to get yourself into a better state of mind but struggled to achieve it.

Sometimes we get stuck in our own emotional dumps and forget how easy it is to feel happier, so here are seven simple ways to lift your mood. Many people have found them useful. Some of them may surprise you!

1. Go for a walk.

Most people know that going for a short daily walk is one of the best forms of exercise. When you are feeling down it is even more beneficial. If you can, go into a natural environment with plants and birds. Can you think of such a setting not? What do you notice first? The different shades of greenery, the fresh smell of country air, the sounds of birds, or the sunlight shining through the trees? Make it real by taking a short stroll.

2. Listen to quality music.

Music can shift a listener’s state within moments. It’s effect can be nearly magical. Dig out that CD you haven’t listened to in ages or tune in your radio to something you’ve never listened to before.

3. Open yourself to discovering something new.

Read something (printed, not on line) different than what you would normally watch. There are a ton of different types of magazines can you get these days. Visit your local library or browse through a magazine rack. Pick up or buy a magazine you wouldn’t normally buy. You may discover something wonderful.


4. Find something to laugh at.

Laughter is one of the best ways to lift your spirits. Find a humorous book, or watch a comedy. Even better, try to learn a few new jokes and tell them to others.

5. Simple breathing meditation.

Breathing meditation is a great exercise that you can do anywhere. Simply allow yourself to sit comfortably with your back straight. Now close your eyes and become aware of the flow of air into and out of your nostrils. That’s all there is to it. Do this for 10-15 minutes. Notice how pleasantly surprised you can be at how you feel afterward.

6. Doodling for the fun of it.

Most people can remember when they were young and used to doodle for hours. Kids love drawing silly little pictures. Drawing is not just for kids or artists. Whoever you are get some pens, pencils, crayons or whatever you have and just draw for the fun of it. Notice how your state of mind shifts.

7. Think of others less fortunate.

The fact that you are reading this article suggests that you are probably much better off than most people on this planet. At times this may be hard to believe, but if you can read and have access to the internet, just those two things alone means you are better off than most people in the world. There are many human beings that barely have access to the basics of survival. There are people in lots of pain. Allow your compassion for them to grow.


These are all pretty simple. There’s nothing profound or life changing, but when all you need is a quick pick me up these may be just the thing you need. Putting simple ideas, methods, tools and techniques into action will help you achieve change more quick and easily–surprisingly so at time– than you imagine.

Extensive studies show that more than 85% of the population suffers from some degree of diminished self-worth, lacking self-esteem and insufficient confidence. For most of the people who lack a positive self-image, the future looks like a mere extension of their troubled past. Their expectation of what is to be is consistent with what has been — with a slight and predictable level of improvement.

Because of their lacking self-esteem and confidence, most are resigned to a life that lacks the excitement and passion that characterizes the lives of those who feel worthy of tapping into the best things life has to offer. People who possess a positive self-image typically have an optimistic expectation of what is ahead of them and as a result, they realize this expectation as a self-fulfilling prophesy.

In contrast to the state of resignation that typifies those with diminished self-esteem and lacking confidence, consider the possibility that the future lives as the realization of a promise — a promise you make to yourself and to the world. The future will result from your expectations and the quality of your future will be impacted by the commitment you have for it. It lives as a possibility. In other words, you get to invent it. In fact, you are the sole designer and architect of what is to be. And the result will be entirely consistent with your expectation and your self-image.

In other words, our future will be directly related to what we expect for it to be. If we doubt our self-worth and expect our future lives to be worse than our current situation, we will sabotage ourselves into making it turn out in alignment with this self-fulfilling prophesy resulting in diminished self-esteem and self-confidence. If we limit our expectations and plan on more of the same results we have to date experienced, our apathy will generate a future consistent with this expectation. To the contrary, if we believe in ourselves and our expectation is that our future will be better than our present situation, self-motivation will result to bring about the positive outcome we envision.

If we feel good about ourselves and expect to live happy, fulfilled, and successful lives, we will take the actions consistent with realizing that expectation. We will therefore generate the opportunities that will result in rich relationships, abundance, and joy being attracted to our lives – because we believe we deserve it and act on this belief.

We get what we expect and attract prosperity or lack, joy or sorrow, rewarding relationships or angry, frustrating ones all as a result of whether or not we feel worthy. Just as we can doubt our abilities to succeed and our attractiveness as worthy of rewarding friends and intimate relationships, we can also instead choose to take full responsibility for expecting all aspects of our lives to be the way we want them to turn out.

Realize that you have consciously or unconsciously attracted everything that shows up in your life to you. If where you are in life, the relationships you have attracted to you, your physical, financial, emotional and spiritual states are not what you desire, decide now to alter your course. Decide that you deserve better. Get in touch with the erroneous decisions you made at an early age. Reframe how you see yourself and resolve to act from a declaration of who you are (just because you say so) instead of the unlovable, somehow defective or unworthy image you made up or bought into long ago.

Change your expectations. Design a life plan consistent with your new expectations. Make requests of those who can support your efforts in some way. The future exists for each of us as a possibility. When we do the necessary work to heal our troubled past and put the self-interpretations that do not support us behind, we can courageously decide to design our future lives deliberately to be in alignment with joy, abundance, fun, fulfillment, and self-love. When we train ourselves to first expect positive results and then to act in accordance with what we expect, we set the stage for a bright and promising tomorrow. We have the personal power to create our future on purpose. The future can unfold out of our declaration of how we see ourselves and what we expect it to be like. To the extent that we take responsibility to expect great things in our lives, ensure we give off positive, attractive, loving energy and then get into action to bring about our expectations, we will be the force behind the realization of a rewarding happy future characterized by soaring self-esteem and confidence.

So, my challenge for you today is to write out a clear and specific vision of exactly what your life will be like in every area including your relationships, health, wealth and finances, occupation, recreation and social life, and personal and spiritual development. Commit to resolving any past issues that continue to erode how you feel about yourself. I wrote “The Self-Esteem Book” and the accompanying “The Self-Esteem Workbook” to support you to learn the tools that will allow you to reinvent your life and how you see yourself. Know that all that it takes is the courage to begin the process of restoring your personal magnificence and start living full of self-esteem and confidence.

Preparing For Pregnancy

Pregnancy Test Almost every woman is blessed with the capacity to bear a child at least once in her lifetime. It is considered to be one of the greatest gifts that a woman can give her husband. Bearing a child would make the couple more closer together, and at this certain point in their lives they can actually call themselves a family. Upon learning that the woman is pregnant, most couples enthusiastically start planning for her pregnancy and eventual childbirth. When talking about pregnancy, it is important to know about preconception issues regarding on giving birth. A check up with the physician or midwife would be advisable for the woman in order to face facts on childbirth. Physical preparation is needed for giving birth, since this could really change the normal function of the woman’s body. A caregiver would be helpful in preparing the woman’s body in conceiving, and also impart information concerning potential problems in pregnancy. Anxiety is felt at this point, since the woman would really have to follow certain precautions in order to conceive a healthy baby. By seeking advice regarding on preconception, safety, lifestyle changes, prenatal vitamins, and the importance of folic acid, the woman could really prepare for giving birth. In preparing for pregnancy, a change in the woman’s lifestyle is needed. Smoking cigarettes is a definite no-no, and also the consumption of alcohol. These addictions can affect the health of both the woman and her unborn baby. A woman might need to lose or gain weight, according to her present weight relative to her height and build. Being too fat or too thin might bring complications for both the woman and the baby. A good start in preparing for childbirth would be to establish a fitness regime for the period of the pregnancy. Asking the physician about nutrition and working out would be recommended for possible questions regarding exercise and food intake. Learning more about the woman’s body while on the early stages of giving birth is essential for proper knowledge of the situation. Various parts of a woman’s body have specific roles when it comes to pregnancy. Certain disorders from both prospective parents should be discussed with the physician for additional health background information. Anxiety and stress is also felt by the couple since this is a very critical stage for the woman. Preconception stress is normal in women about to give birth, considering factors such as scheduling, sexuality, and self esteem, among many others. 12a When preparing for pregnancy, the couple should be confident enough to know how to handle a child. Knowledge of early pregnancy symptoms are also important since these are signs that giving birth would happen in due time. When the couple feels that they are ready, then a visit to the Obstetrician/Gynecologist (OBGYN) would help in gleaning more information on pregnancy. At this point, the couple can make use of a pregnancy calendar in order to follow the due course of giving birth. Anxiety is often felt by women when they know that they are pregnant. Feelings of worry and tension are usual signs that shows her being anxious about giving birth. But by spending time with your husband, regular visits to the OBGYN, finding time to relax and unwind, with good exercise, anxiety should not be a problem at all. All you have to worry about is what to name the baby?

Letter to the Editor of The Shuttle, Weaver’s Way Co-Op, Philadelphia

Dear Editor of the Shuttle newsletter:

This is in response to the article written by Norman Weiss (Suggestions), Weaver’s Way Co-op (Phila., PA) purchasing manager, in the Aug addition of The Shuttle (pg 19)?   Quite an interesting read. I was all in except for his disturbing answer to Devon’s question. For some reason, the energy that the first part of the article was written was absolutely opposite the last part.  Granted Weaver’s Way is a business and when it comes to making business decisions…the bottom dollar always wins when it comes to making conscious choices about the health and welfare of our community and the earth in general. I just thought that his answer to her was a bit harsh…and I could even read into it more deeply to say…that the entire reason of creating a community based food co-operative was just flushed down the toilet with his answer.  Let me dig deeper:

Norman says: “Stop persecuting GMO items.” Why? How are we going to change the system if we don’t stand up for what is absolutely wrong on all fronts.  Why are other (entire) countries burning down crops of GMO foods and refusing GMO food donations even though most of their people are hungry?  There is something to be said of the little staffer girl in a small community who speaks up for the entire world. (Give her a raise!)

Norman says: “We are and inclusive, tolerant and diverse organization that welcomes all God’s children.” <<< Is Weaver’s Way a church?  And if this is the sentiment of all of God’s children…then recognize that GMO foods are not from God.  So I could argue that they are not of God’s children but of Man’s children…or like some people like to call GMO…the Devil…which is far worst.

Norman says: “We have to have some white sugar or the shoppers will rebel.”  <<< No they won’t! Most folks know where to get cheap GMO white sugar…Acme, Shop Rite and any other corporate conglomerate that doesn’t care about the people, just their bottom line.  Like was mentioned in the article, Weaver’s Way doesn’t have the resources to do a full on investigation of all the products it sells, however the mission of Weaver’s Way clearly states that it strives to educate its members and community about consumer issues and the cooperative movement. Not to mention that the mission also states that WW is committed to the Environment…in these words: We work to sustain a healthy planet, promote environmentally sound products and practices, encourage and support local and organic farming, and try to act with environmental consciousness in all our endeavors.   Im sure the members will be grateful to know that their co-op supports the earth rather than the profit.

Norman further states: “I don’t know of a non-GMO sugar-beet-cheap white sugar we can get.”  Um…is this the purchasing manager speaking here?  There are plenty of non GMO sugars out here: Agave, Coconut Nectar, Stevia, etc…But if someone wants cheap white sugar, there are other places to go….Shop Rite.  Here is where education is needed…folks need to really stop buying it altogether.

Oh yeah, and this is the part that inspired me to write this. Norman finally ends his answer to Devon about her post on the GMO Hellman’s Mayonnaise (and white sugar) that Weaver’s Way sells:

“Please remember that exploitation of the Earth and its people is what helped make this country great and allows us in the middle class (read: privileged) to enjoy a lifestyle we’ve all come to cherish.” <<< When in history does the exploitation of people and its lands benefit a country? Thoughts come to my mind: Slavery, “Third” World Debt, China, Indentured Servitude, Walmart…you get it! Someone saying that exploitation is what gives us this comfortable cushy life where we can buy Hellman’s GMO Mayonnaise and Cheap GMO white sugar if we choose to is great and something to cherish is…all I can think of…Scary!

So how did this article get passed the Editor? Doesn’t Norman’s answer to Devon come as a red flag to the integrity of the organization? To the community?  To others (non-middle class)? To members and non-members who appreciate the fact that this awesome organization offers something more? Hey! I’m not interested in Norman’s head on a platter… but I am just responding to the contradictions that his answer implies to the mission of the entire organization. Im just wondering why, when a simple and profound statement is brought up to the purchasing manager of a small (yet revolutionary) organization answers like this are acceptable…and printed. Plain and simple, Norman’s answer was absolutely horrible! I hope this letter connects to the members and inspires to raise awareness not about the fact that Weaver’s Way sells Hellman’s and other GMO brands (well, yes, that too), but to realize that this is the type of organization that is pivotal in creating change in this society and to use these types of opportunities to educate and advocate for our community, our environment and our world in general. Hopefully something wonderful can come out of this!

Release the Grease 2: Day 6

If you get nothing else out of this cleanse I hope you have gotten into the awesome habit of inundating your body with awesome juices and smoothies.  The benefits that you are gaining are something that you should continue even when you start refeeding your body with healthy foods again. The term “juicing” is often associated with fasting. Indeed, juice fasts have become synonymous with cleansing and detoxification, thanks in large part to television infomercials and medical programs.

A juice fast is a commitment for a certain length of time to only consume raw vegetable or fruit juice, water, and herbal non-caffeinated teas.

A popular reason to begin a juice fast, or “cleanse,” is to shed excess weight or to get a running start on a weight-loss program. An often-surprising consequence of a successful cleanse is an improvement in mental clarity, energy levels, skin tone, and sleep quality. Many people report that hey simply feel “lighter” after a juice fast.

The simple explanation of a juice fast resulting in detoxification is this: a body receives all of its nourishment from vegetable juices only; since the digestive system is barely involved in the processing of the juices, it is allowed to rest. When the digestive system is not defending itself against new toxins, it is able to release stored toxins which are surrounded by fat.

As toxin-containing fat cells are released, the body feels lighter and more energetic.

There are many kinds of targeted cleanses, such as the intestinal cleanse, the gall bladder cleanse, and so on. Critics scoff at that level of specificity. In fact, many claim that the human body is perfectly capable of “cleansing” itself as needed.

Fasting/cleansing advocates agree that the body is a miraculous machine. But they point out that modern life with air and water pollution, sedentary lifestyles, and poor, fried-food and sugar-laden diets has created such an imbalance for our body systems that help, in the form of juice fasting, is needed.

A juice fast, whether for weight loss or just general good health, needs to be entered into with serious thought and commitment and planning. Unlike someone who decides to buy a juicer and make a juice to take to the gym each morning, a faster will be consuming juices only, usually six per day.

There may be digestive (constipation and/or diarrhea) issues involved in the first few days of a juice fast. Since that can affect your activities, you may want to schedule a fast for a time when you can be near home with limited work and social obligations. (Transitioning into a fast by making a couple of juices each day and increasing your intake of raw vegetables may help reduce the problem potential.)

You will want to be sure to have a good supply of fresh vegetables and greens on hand. Since you will not be eating any solid foods at all, you can’t simply open the refrigerator for something to “tide you over” until you get out to the supermarket.

Mood swings and sleep issues may be noticeable in the first few days of your juice fast. It may be wise to sit down with your partner or roommates and get them on board with what you are planning.

Interestingly, you may find that you are not tempted by the sights and smells of food in your home or at the grocery store. If your juices are filling enough (14 – 16 ounces each serving), you may be quite satisfied and not feel hungry.

There are no guarantees, of course. A good tip is when you are tempted to snitch an unfinished sandwich—or even munch on a cucumber slice while you are making juice—to visualize your stomach enjoying its vacation from solid foods!
Essentially what we are doing is a “fast”…we are fasting off of cooked solid foods…but its not a true fast.

Ok…let me be the one to say that this food combining chart that has been going around the world for years is one big fat bowl of junkfood. There is nothing substantial about it and folks need to stop posting it as if it really saying anything prolific. Im kinda over the health garbage that comes out every year. What we gotta say to ourselves is where is the proof and does this make sense? NO IT DOESNT!

First of all, one of the biggest issues that this food combining chart mentions is that you cant mix protein with starch. UH! Well, just about everything has a lil bit of both: Beans, protein and starch; Rice, protein and starch; Many veggies contains protein and starch; This chart is wack and has NO scientific backing whatsoever.

It doesnt even go along with the process by which we digest food at all. This chart is basically saying that the stomach requires items to be digested one at a time, no mixing of foods, due to the release of digestive enzymes. How many people have over the years stopped mixing Melons with anything else? ME!! I admit to being a fool with the food combining for years…can you find any real information as to why you can eat melons with anything else but other melons? NOPE! Me neither! And guess what Watermelons and Cucumbers are related…but you cant mix them in the same eating? Sounds pretty darn silly to me!

Let’s be SMART folks! Im going to admit that this chart has puzzled me for years….because I could never follow it..and always felt guilty of not following it. Let’s face it! If this chart were really true, all people everywhere in the entire world would be sick every time they ate because all we do is mix our foods when we eat. The basis of all cuisines in the world is mixed macronutrients…and here is the good news…YOUR DIGESTIVE TRACT CAN HANDLE IT! YAY!

Happy Saturday!

Who loves the weekends?  I do.  So Im not sure you got the memo but I have decided to make Revolutionary changes in my life.  I started 3 days ago by going fully raw. Its pretty funny because I have been in the raw food movement for over 18 years…longer than most people have heard about it. And I have dedicated myself from time to time to going raw too before.  This time is different. Why? You say… Well, for one…next March is my 40th Birthday.  And I fell like it is one of those milestone birthday marks.  To me it’s like a now or never type of thing. Another thing is that I feel like I know too much not to be fully raw…or at least high raw.  The benefits are too great to ignore…and Im sure you have heard them.


Any who, I wanted to invite you to be apart of the movement.  I have a super special group of just over 100 people who are participating in this Revolution with me. They are dedicated to getting healthier, eating more raw, more vegan, juicing more, losing weight, getting fit, working out and helping to alleviate dis-ease in their life and the lives of their families too.


Right now we are working on some more videos to teach folks how to create more raw dishes that are easy to make.  I know most folks are not keen on lots of food preparation so we need to make this easy for them. I am a master at making foods easy and tasty too.  A lot of people need simple steps that they can follow.
